Stone holds temperature remarkably well, which matters in a region that is fierce in summer and genuinely cold in winter.

Launches are around dawn and the difference between a view over the valleys and a view of the building opposite is the difference between the morning you imagined and the one you get.
Where to base yourself
Cappadocia is walked from a base rather than village to village — the valleys loop back on themselves, and most walking days start and end near the same towns. Göreme is the most central and the busiest, sitting between the main valleys. Uçhisar is quieter and higher, with the best long views. Cappadocia is a destination in its own right, not only a walking region, so you are booking against general tourism rather than other hikers. The best cave hotels are small — a dozen rooms or so — and the well-known ones book a long way ahead in spring and autumn, which is also when the walking is best. Balloon season and public holidays tighten it further.
